Easy Jalapenos stuffed with Potatoes – Microwave Recipe

8 medium Jalapeño Peppers ( halved and de-seeded)

2 boiled & mashed Potatoes

2 tbsp chopped onion

1 tbsp chopped garlic

1/8 tsp asafoetida powder

1/8 tsp turmeric powder

Salt to taste

1 cup shredded cheddar

1 tbsp cooking oil

1/8 Red chilli powder ( in case Jalapenos are not hot )


In a microwave safe bowl , heat the oil on high for 30 seconds , add onion and garlic and heat again on high for 1 minute.

Add asafoetida powder , turmeric powder & chilli powder ( if using ) to onion garlic mix and stir. Add mashed potatoes. Sir well. Heat on high for 1 minute. Take it out and keep aside.

Stuff the Jalapeños with potato mix and top it with shredded cheddar. Put the stuffed jalapeños on a microwave safe baking tray. Heat the microwave on medium setting in combination mode for 7 minutes ( if your microwave has one ) or for 5 minutes on low setting in the normal microwave mode. Till the cheese melts.

Your stuffed Jalapenos are ready to eat.

ps : you may also stuff the jalapenos with pineapple ( just replace potatoes with pinapple ) for a spicy + sweet snack


Microwave Indian Curry Style Instant Noodles ( Maggie)

Onions (chopped) – 1 large

Tomato (chopped) – 1 medium

Garlic (chopped) –   4 cloves

Green Chilli (chopped) – 1

Turmeric Powder – ½ tsp

Coriander Powder – 1 tsp

Coriander Leaves (chopped) – 2 tbsp

Maggie or any other instant noodle – 1 packet ( 300 gram)

Salt – to taste

Oil – 1 tbsp

Water – 1 cup (100 ml)



  1. In a microwave safe bowl add the oil and heat on high for 30 seconds.
  2. Add onions, tomatoes, garlic, green chilli, turmeric powder & coriander powder to the bowl. Stir well.
  3. Heat on high for 4 minutes, stirring in between.
  4. Add the Maggie noodles / instant noodles of your choice into the bowl. Add water. Heat on high for 2 minutes.
  5. Garnish with chopped coriander. Your  Indian curry style instant noodles are ready to be relished.

Easy Fruit Chaat – Healthy Summer Recipe

1 pear, peeled, cubed
1 apple, peeled, cubed
2 bananas, sliced
1/2 pineapple, cubed
1/2 tbsp chhat masala  (available in Indian Stores)
1 tbsp. lemon juice
Salt to taste

Mix all the ingredients in a bowl and serve. Its healthy & yummy.
