Have a cheesy, spicy day: Valentines Jacket Potato

1 large potato

5 tbsps. cup grated cheddar/ processed cheese / vegan cheese

2 tbsp. chopped Jalapeno pepper (if you don’t like spicy replace with green pepper/ Shimla mirch)

1 tbsp. tomato puree

1 tbsp. chopped green onion / leeks

½ tbsp. chilli flakes

Method

Wash jacket potato and pierce with fork all over.

Place in microwave on high for about 8 minutes until done (test with knife / fork)

Cut the potato in half, scoop out the fluffy middle.  Mix the scooped out potato with chopped jalapeno, leeks, chilli flakes, tomato puree & 3 tbsps. of cheese.

Stuff the potato halves with above mix & top with remaining cheese (1 tbsp. each)

Put the filled ‘jackets’ on a microwave-safe plate and heat for one minute, or until the cheese has melted.

Enjoy “Love” on a platter.

Better than love : Choco-orange Mug Cake

All-purpose flour – 2 tbsp

Orange Marmalade – 1/2 tbsp

Nutella -1/2 tbsp

Sugar -1/2 tbsp

Cooking oil – 1 tbsp

Milk – 2.5 tbsp

Cocoa powder (unsweetened)- 2tbsp

Baking powder – 1/4 tsp

Salt – a pinch

Vanilla essence- few drops

Method

Take a large microwave safe bowl & add all dry ingredients (flour, sugar, chocolate, salt, baking powder) into it, mix well.

Add oil, milk, marmalade, Nutella & vanilla essence, mix well & remove all lumps.

Place in microwave and heat on high for 90 seconds, test with tooth prick.

You cake is ready to eat

PS: watch the cake continuously (burnt cake doesn’t taste good, and microwave power differs)

½ Cup Soya Vanilla Milk or Normal Milk (vanilla brings in its own flavour)

½ cup fresh strawberries (if tart, you may add ½tbsp spoon sugar)

½ banana

6-8 mint leaves

1 tbsp whey protein (optional)

Method

Put all the ingredients in blender & blend , your pink love smoothie is ready

Easy Jalapenos stuffed with Potatoes – Microwave Recipe

8 medium Jalapeño Peppers ( halved and de-seeded)

2 boiled & mashed Potatoes

2 tbsp chopped onion

1 tbsp chopped garlic

1/8 tsp asafoetida powder

1/8 tsp turmeric powder

Salt to taste

1 cup shredded cheddar

1 tbsp cooking oil

1/8 Red chilli powder ( in case Jalapenos are not hot )

Method

In a microwave safe bowl , heat the oil on high for 30 seconds , add onion and garlic and heat again on high for 1 minute.

Add asafoetida powder , turmeric powder & chilli powder ( if using ) to onion garlic mix and stir. Add mashed potatoes. Sir well. Heat on high for 1 minute. Take it out and keep aside.

Stuff the Jalapeños with potato mix and top it with shredded cheddar. Put the stuffed jalapeños on a microwave safe baking tray. Heat the microwave on medium setting in combination mode for 7 minutes ( if your microwave has one ) or for 5 minutes on low setting in the normal microwave mode. Till the cheese melts.

Your stuffed Jalapenos are ready to eat.

ps : you may also stuff the jalapenos with pineapple ( just replace potatoes with pinapple ) for a spicy + sweet snack

Spicy Corn Mix / Indian Corn Salsa / Corn Chaat- Easy Snacks

  • 2 cups corn kernels
  • 2 medium cubed boiled potato
  • 1 tbsp finely chopped raw mango (if available )
  • 1 large tomato chopped
  • 1 large onion chopped
  • 6-8 nacho chips / papdi ( broken into small pieces )
  • 1/4 cup chopped coriander
  • 1/4 cup chopped mint leaves
  • 1/2 tbsp chopped green chilles
  • 2 tbsp lemon juice
  • Salt to taste
  • 1/4 tbsp Chaat Masala (  Easily available in Indian Stores)

Method

Mix all the ingredients together & Serve

Easy Soya Chunks in Gravy Microwave Recipe

Soya Chunks : 750 grams soaked in water 20 minutes

Onions : 2 large chopped finely

Ginger Garlic paste : 3 tbsp

Tomatoes : 2 large chopped

Tomato puree : 1 tbsp

Curd / Yoghurt : 1/2 cup

Cinnamon : 2 inches stick

Green Cardamom : 3 pods

Bay Leaves : 2

Garam Masala : 1/4 tsp

Chaat Masala : 1/4 tsp

Cumin Seeds : 1/4 tsp

Coriander Seeds : 1 /4 tsp

Turmeric Powder : 1/4 tsp

Red Chilli Powder : 1/2 tsp

Oil : 2 tbsp

Salt to taste

Method

In a microwave safe glass bowl add oil , heat on high for 30 seconds. Add cumin seeds , coriander seeds , bay leaves , cardamom & cinnamon and heat on high for 30 seconds.

Add onions , ginger-garlic paste , tomato puree & tomatoes. Microwave on high for 3 minutes. Add soya chunks , turmeric powder , red chilli powder. Mix well. Add 500 ml water. Cover and cook on high for 3 minutes. Add curd / yoghurt , mix well . Cover and cook on High for 5 minutes.

Your delicious Soya Chunks in Gravy is ready.

Easy Tempered Mashed Potato in Microwave

  • 4 medium potatoes – peeled
  • 5 cloves garlic – chopped
  • Salt to taste
  • pepper to taste
  • 3/4 cup milk
  • 5 tbsp butter

For Indian style topping

  • 1 tbsp butter
  • 1 pinch hing ( asafoetida)
  • 1/2 tbsp cumin seeds
  • 1-2 green chillies  (slit them in the middle)

Method

Pierce the peeled potatoes all over with a  knife and microwave on high power until tender, about 5 – 7 minutes. .Mash the potatoes using a fork. Set Aside

In a microwave safe bowl put the milk. Microwave on high until just simmering, about 45 seconds.

Add butter , garlic , salt , pepper & mashed potatoes to the bowl with milk. Continue mashing till the desired consistency is reached.

For The Tempering

In a microwave safe bowl , add butter , hing (Asafoetida) , green chillies, cumin seeds . Heat on High for 1 minute.

Add this tempering on the top of mashed potatoes, mix well.

Your tempered mashed potatoes are ready to eat.
