I write this post because am feeling disgusted with us as “HUMANS” – we fight wars , we commit acts of terrors , we act selfish – misusing the earth and its resources. Yet , we have the audacity to say that street animals are a menace.
We encroach on forests , we lead to deforestation , we ensure demise of entire species – yet if any poor lost wild being , looking for food enters our cities or villages – we ask them to be hunted down.
Am tired of reading about #cecilthelion or #indiantigers or #streetdogs or #dugong – can we as humans start acting humane ? Do you think its possible or do you think we will be the next #dinosaurs
Its raining outside and I’m craving something crispy , spicy , tangy & easy to make. And there’s nothing better than pakodas to go with the rains. So here’s a super simple recipe.
8 Jalapeno peppers ( de-seeded ) or large chillies ( don’t slit all the way – they should make a pocket)
1/4 cup Tamarind paste ( easily available in all Indian stores)
1 cup gram flour (besan)
2 Tsp Chaat Masala (easily available in all Indian stores)
Pinch of Asafoetida (hing)
1/2 tsp cumin seeds ( jeera)
1/2 tsp carom seeds (ajwain)
Salt to taste
4 tbsp water
20 ml oil
Mix gram flour, salt, asafoetida , cumin seeds & carom seeds in a bowl. Add water & mix well to make a paste.
In another bowl mix tamarind paste & chaat masala. Mix well.
Stuff the jalapeno peppers with tamarind paste in step 2.
Dip the stuffed peppers in the gram flour paste , ensuring they are thoroughly coated
Place them on a greased microwave tray and spray some oil on all peppers. Grill them in microwave on high for 3 minutes.
Turnover , spray with a little more oil and grill on high for another 2 minutes.
Your yummy hot treat is good to eat.

For Cottage Cheese Balls
Paneer / Cottage Cheese – 250 gms.
Maida / Plain flour – 2 tbsp
Salt (as per the taste)
Coriander Powder – 1/2 tsp.
Green Chilli – 1 (finely chopped)
Green Coriander – 1 tbsp (finely chopped)
Milk – 2 tbsp
For the Gravy
Tomato purée – 2 tbsp
Green Chilli – 2 finely chopped
Onion – 2 tbsp finely chopped
Ginger – garlic paste – 1/2 tsp
Coconut milk – 1/4 cup
salt to taste
Coriander powder – 1/2 tsp
Turmeric powder – 1/4 tsp
Water – 1/2 cup
For the Balls ( Koftas )
Mix all the ingredients in a bowl to make a soft dough. Divide the dough to make 12 small balls.
Place them on a microwave-proof plate and microwave on high for 1 minute. Keep aside.
For the Gravy
Combine all ingredients except coconut milk in a microwave safe bowl & heat on high in a microwave safe bowl for 3 minutes.
Add coconut milk and balls in the gravy and heat on high for 1 minute.
Your easy cottage cheese balls gravy is ready to eat – try it with rice or boiled noodles or with bread 🙂

After having some junk food for lunch, its ok to indulge once in a while, go shopping: buy yourself all the gifts you wish– be it the chocolate or flowers, a new dress or diamond earrings. Go on splurge.
Wine & Dine: Decorate your dinner table and relish your 3 course meal of
spicy, cheesy jacket potatoes, mushroom risotto & choco-orange cake with a glass or two of wine. End the day by reading your favourite book or movie ( avoid romance they will make you feel lonely , instead go for action or comedy)
Bed-time ritual: light some candles or a dim lamp, massage yourself with a fragrant lotion, say thanks for all the good things in your life and hit the bed on a positive note.

2 tbsps. butter
3-4 cloves finely chopped garlic (you may reduce / add garlic based on your preference)
½ chopped onion
¼ cup uncooked Arborio rice/ sticky rice
1/2 cup water or vegetable stock
20 ml white wine
2 tbsps. grated cheese
¼ cup chopped mushrooms
Salt & pepper to taste
In a microwave safe glass dish combine butter, garlic and onion. Place dish in microwave and cook on high for 3 minutes.
Add mushrooms, and season with salt and pepper. Microwave until mushrooms have become tender, about 5 minutes.
Put rice & water / broth into a different microwave safe bowl, cover tightly & heat on high for 10-12 minutes.
Stir in the wine & cook on high for about 2 minutes , add mushrooms mixture and heat for 2 more minutes.
Stir in the cheese and enjoy your yummy risotto
